Can I transfer save data for the demo version that I created on a PS4 over to the full version of the game on a PS5?
No, this is not possible.
Save data can only be transferred in the following manner:
[PS5 Demo version] --> [PS5 Full version]
[PS4 Full version] --> [PS5 Full version]
